You basically roast the chicken pieces in the oven until they are done, make the creamy mushroom sauce and caulimash.

Instructions
  1. First off, preheat the oven to 200 degrees Celsius and arrange the chicken pieces in an oven safe baking dish.
  2. Rub with olive oil and season generously with salt and black pepper.
  3. Roast in the oven until crispy – for about 40 minutes at 180 degrees Celsius.
  4. Meanwhile, in a saucepan heat the butter and saute the onion and garlic until translucent.
  5. Add the mushrooms and fry until dry.
  6. Deglaze the pan with the wine, add the cream and parsley and leave to reduce until desired thickness.
  7. For the cauliflower mash – steam the cauliflower florets of one head until soft. Blend in a food processor with butter and seasoning.
  8. Serve the crispy chicken with mushroom sauce and cauliflower mash.
