Apricot, Macadamia and Honey Granola

When you are on the fast track called life, it is so easy to get sidetracked from eating properly.

This struggle is totally and irritatingly real. The last month saw me rushing out of the house before seven in the morning, without even a waft of breakfast in the air.

You know the drill right?  The rush of getting to work, meetings and projects on time – without even thinking of fueling your body with what it needs – and then you end up with a muffin, wimpy toasted or worse – a garage pie.

I had enough of it and decided to make a whole truck load of homemade granola for those frantic mornings that seems to be happening every day now.  I now have no excuse to have a quick bowl of granola with my favorite double thick yogurt, fresh fruit and honey.

I decided to use the most delicate soft and chewy, dried apricots with some whole macadamia nuts, cinnamon spice, vanilla, honey, seeds, coconut oil and rolled oats.  I also had some dried cranberries leftover from a shoot and just decided on the last minute to add it in also.

You can add literally anything to your granola.  Think about the array of nuts and seeds that’s available that will transform any simple granola.  You can add more liquid if you like your granola a bit sticky and clumpy, and less liquid if you like it a bit more dry. I didn’t use that much liquid in my recipe and the honey and coconut oil just gave the right amount of sweetness I desired.

Instructions
  1. In a large mixing bowl, combine the rolled oats, nuts, seeds, spice and dried fruit.
  2. In a smaller mixing bowl, combine the honey (or maple syrup), coconut oil and vanilla essence and microwave for one minute until combined.
  3. Combine the wet and dry ingredients.
  4. In a large baking tin, transfer the granola and press down slightly.
  5. Bake in the oven at 180 degrees Celsius for 30 - 35 minutes until toasted. Remove, leave to cool and transfer to glass jars.
  6. Serve with lime zest, fresh fruit and yogurt.
