Butternut, Feta and Thyme Quiche

This is a great recipe for vegetarians that can be served for an early lunch or dinner.  Add more greens to the mix, and create a well flavored dish.  Chopped zucchini, spinach or asparagus makes great additions to this lovely quiche.  Use the easy and simple pastry crust recipe to line one medium size quiche pan and preheat your oven to 180 degrees Celsius.

Instructions
Easy quiche pastry
  1. Add all the dry ingredients and mix.
  2. Next add all the wet ingredients and work with your fingers until easy manageable dough is formed.
  3. Line your tart or quiche tin with dough by pushing it firmly down with your fingers.
  4. No need to blind bake this dough, simply add your filling to the raw crust and bake desired time.
Butternut, feta and thyme filling
  1. Arrange butternut in an oven safe baking dish and roast until soft for 20 minutes at 180 degrees Celsius.
  2. In a saucepan, heat the oil and sauté the onion, garlic and thyme, remove from heat.
  3. In a mixing bowl mix the eggs, milk, cheddar cheese and salt and black pepper.
  4. Add the grilled butternut chunks and onion. Mix through without smashing the butternut.
  5. Carefully pour into raw pastry and sprinkle with feta cheese.
  6. Bake for 30 – 40 minutes at 180 degrees Celsius, until set.
