Cucumber, Corn and Sprout Salad with a Thai Dressing

Even though the cooler weather has set in here in South Africa, my cravings for crunchy greens has not been dampened yet. As it is with my current food-fussy, veggie-hating housemates (aka hubby and kid), I barely see any greens on dinner plates. I mean, it’s only cucumber, grilled corn, mange tout peas and sprouts, for goodness sake.

This just motivates me so much more to include vegetables into my daily diet. Being a freelancer at home, with the kitchen being my only companion, has it’s perks and I now force myself to include only plants based foods when I make myself lunch. Grab those cucumbers!

The recipe cannot be more simpler or easier. Slice your cucumber in ribbons or spirals, bulge your plate up with mange tout peas and fresh sprouts. The grilled corn gives a delicious sweet note the dish and I absolutely love love LOVE this Thai salad dressing.

This Cucumber, Corn and Sprout Salad is a healthy and fresh lunch idea, or you can just whip it up when next you are firing up the grill, to serve as a side.

And by the way… I have now decided to be very mindful when it comes to my diet. I used to love the low carb, high fat movement – but life is always in a hurry and I quickly became bored with it. I’ve always stayed on the ‘healthy’ track, but sometimes I just binge eat like a pig. And I admit it.

I love carbs so much and the fact that a quick burger, braaibroodtjie, boerie roll or comforting bowl of pasta is so easy to make, guys, makes it so much harder. I fail terribly every time…

So now I am all about moderation and trying to keep my head clear when it comes to take aways or processed foods. I know that I might fail, and it’s ok. I am not going to beat myself up over a choccie or treat or bread or pasta now and then. I’m ok with that.

An easy cucumber, sprout, mange tout pea and corn salad with an insane Thai dressing.

Cucumber, Corn and Sprout Salad with a Thai Dressing

Instructions
  1. In a saucepan, heat the coconut oil and gently fry the corn - careful they do pop from the heat so keep an eye out. Leave to cool.
  2. In a salad bowl, combine all the ingredients for the salad and bulk up with mange tout peas if need be.
  3. In a smaller mixing bowl, combine all the ingredients for the dressing and mix well.
  4. Serve the salad with the dressing as a light lunch or as a side to your grills and roasts.
