I’m back today with a little recipe roundup I’m sure you will love. We are talking: sweet potato. Such a versatile ingredient and one I think no pantry or veggie drawer should do without. Not only is it nutritious, it has a mere 86 calories per 100gr, and the perfect substitution for the evil potato.
My ‘diet’ or eating lifestyle is simple. I like to live in moderation, simply because I love food. I love eating good food, and sometimes it’s a healthy dish – where other times it is ladled with carbs and cream. I do like to think I am starting with making better food choices, as supporting local, organic farmers and including plants and whole foods in my diet has now been the norm.
Whatever the case may be, on days where I really crave a filling, plant based meal I always tend to grab a sweet potato or two.
This recipe was born purely out of my ridiculous craving for mash. A simple but satisfying low carb meal.
I love being able to whip up a quick vegetable soup for lunch or dinner. This version is delicious served with creamy avocado and sprouts.
Need I even explain why this is absolutely the best veggie nachos out there? I think not…
For the salad lovers, this recipe of Spinach and Sweet Potato Salad is a winner – a delicious, zesty mustard mayo completes the dish.
And then one always needs a comforting, healthy snack somewhere in between right?
