Grilled Veggie and Sweet Chilli Salad

Since the summer officially took off, I have been receiving requests for salads from my Corporate Lunch clients.  Yes everyone, I now also supply Corporate Catering – by means of individual sized lunches and lovely platters for those meetings that’s normally scheduled for an hour but ends up lasting past lunch time…

This is the perfect opportunity for some of my lady clients to get back into shape for summer, as I cook all meals from my kitchen at home, using only the freshest and wholesome ingredients I can find.  They just love my salads…

So this time I decided to do a Grilled Veggie and Sweet Chilli Salad.  It consist of a bed of greens, arugula (rocket) goes best with grilled veggies, but you can use any lettuce you wish; followed by a variety of grilled veggies, sprinkled with a cinnamon and nutmeg spice, topped with fresh basil and a mouthwatering sweet chilli sauce.Grilled Veg and Sweet Chilli Salad

What makes this recipe so great is the fact that it is so versatile.  You can really add any veggies you like, any herbs you like, and any lettuce you like.  That is the great thing about salads; there are literally endless variations out there. And the best part is that it’s easy AND healthy!

Preheat the oven to 180 degrees Celsius

Grilled Veggie and Sweet Chilli Salad

Instructions
  1. In a roasting pan, arrange the vegetables, drizzle with olive oil, season with salt and pepper and spices.
  2. Cover with foil and bake for 30 minutes. Remove the foil, give it a good mix, and bake for another 10 minutes until veggies are soft and roasted. Remove from oven and leave to cool.
  3. Arrange rocket in a salad bowl, add the veggies, sprinkle with fresh basil leaves, drizzle the sweet chilli sauce and season with salt and pepper.
