Vanilla and White Chocolate Bundt Cake

It is Mother’s Day again on Sunday.  It was only Mother’s Day a year ago, but it felt like yesterday when I wrote this post, halfway through writing it, I was bawling my eyes out.  But this year, I feel much more composed and excited to be sharing this amazing recipe of Vanilla and White Chocolate Bundt Cake with you all.

Vanilla and White Choc Bundt Cake

It is a recipe passed down from my late Aunt, who had five boys.  No jokes.  Mother of the year.

I never knew her, but the stories my mother tells me are pretty amazing – and I have heard some people say that I remind them a little of her. A bubbly, funny and energetic woman –she sure had the right recipe to treat all the little ones she had running around her house.

Vanilla and White Chocolate Cake

This is a one-bowl vanilla cake recipe.  One bowl.  Say it. Believe it.

I used my electric mixer, added all the ingredients together and mixed it for about 5 minutes.  The result?  An amazingly decadent, fluffy and soft vanilla cake.

Vanilla and White Chocolate Cake

From heaven.  Made with love.

Preheat the oven to 200 degrees Celsius, and prepare a bundt cake pan with nonstick spray.

Vanilla and White Chocolate Bundt Cake

Thank you Aunty Titta for a recipe that speaks of love and hope, and the reminder that we must cherish every moment with our loved ones for our time on earth are so short.   I hope all the mommies out there get spoilt on Sunday, even if it is only to spend a few precious hours with your kiddies and those who mean the most to you.  Happy Mother’s Day!
