An on the go snack featuring dates, nuts, coconut, rolled oats and peanut butter.

  1. Heat the butter in a small saucepan and add the chopped dates. Keep heating and mixing until melted and soft. Remove from heat.
  2. Immediately add the coconut, oats, peanut butter, nuts and vanilla essence.
  3. Mix through with a spoon.
  4. Using your hands, shape small balls and dunk it in more coconut.
  5. Melt the white chocolate over a double boiler and carefully stick each disk in the middle of each energy bite.
  6. Drizzle with white chocolate and serve.

It is best to shape these energy balls while they are still warm – be careful not to burn.
