  1. Preheat the oven to 200 degrees Celsius; arrange veggies in an oven safe pan, drizzle with olive oil, season, cover and bake for 30 minutes.
  2. Roast for an additional 10 minutes uncovered or until they start to get that roasted color.
  3. Serve with cooked bowtie Farfalle pasta, and fresh cilantro.
