Don’t you agree that we need an extra weekend to recover from the weekend? I sure do! So, after hitting the gym this morning I craved a simple lunch made with fresh ingredients and mouthwatering flavours.

These bites are also pretty nifty to use as a starter or snack before your favourite sports game or any other occasion (as long as there are bubbly and beers). You can also try my Roasted Tomato and Onion Bruschetta for a different flavour approach. My only tip: Don’t forget the pesto… Enjoy!

A fresh and light lunch that consists of toasted french loaf slices topped with sauteed brown mushrooms, fresh pepper and coriander pesto.

Instructions
  1. Spread the pieces of sliced loaf with butter and toast in the oven until golden. Set aside.
  2. Heat the next bit of butter in a saucepan, add the garlic and saute for a few minutes. Add the chopped mushrooms and saute until soft. Set aside.
  3. For the pesto; combine the coriander, almonds, parmesan, garlic and olive oil and grind to a paste in a pestle and mortar or food processor.
  4. Assemble the Bruschetta by adding heaps of mushrooms, chopped peppers, parmesan and coriander pesto.
