If there is one thing about this Banting business that I really do miss, it has to be crackers and dips. As in salti cracks with delicious cream cheese. Now I have to improvise with that, and I often find myself dipping celery sticks and cucumber into bowls of creamy deliciousness. Because I can have all the cream cheese in the world…
I decided to go for an easy Biltong and Basil Pate when the folks from Biltong@za sent over their amazingly versatile powdered biltong. This of course is a great addition to soups, quiches and cheesy bakes and can be kept in a freezer for up to two months.

Back to the pate, which is a banters dream by the way… It consists of powdered biltong blended with full cream cottage cheese, fresh basil, onion and lemon, seasoned with loads of black pepper.
I don’t wait for an occasion to have this, mind you, I just have wedges of this creamy Biltong and Basil Pate on its own as a snack throughout the day.
Snacking just got overhauled with this easy pate recipe. Impress the weekenders by serving it with biscuits of your choice, fresh fruit, marmalades, olives and cold meats with a few sun downers of course. Enjoy!

- 250 gr smooth cottage cheese
- 1 cup powdered biltong
- handful fresh basil finely cut
- 1/2 onion finely chopped
- 1 lemon juice retained
- black pepper to season
- In a mixing bowl combine all the ingredients and mix thoroughly with a spoon until combined.
- Line a desert bowl or plastic container with glad wrap, transfer the pate, cover and refrigerate until use.
