Caramelized Onion, Bacon and Gouda Omelette

I don’t usually post Breakfast recipes, but, when I do, it is normally in the form of a delicious Omelette.  Like this one I did a few weeks ago, omelettes are seriously the easiest way to get a whole lot of goodness on one plate.

Caramelized Onion, Bacon and Gouda Omelette

It is always a “surprise on a plate” for hubby, as I normally use whatever ingredients are leftover in the fridge.  It normally consists of cheese, mushrooms and fresh tomato.  I love caramelized onion with my omelettes and the addition of crispy bacon bits makes this version a breakfast for champs.

Because bacon fixes everything.

Use your own variety of fresh ingredients, and any cheese goes well with omelettes. I used a Dutch Gouda, which almost reminds me a bit of Swiss Emmental cheese, with a creamy, bitter taste. Combined with the sweet caramelized onion – my sweet vs savoury taste buds were doing summersaults with each bite…

To top it all off, this recipe is carb free and a very appropriate fatty meal for the banters out there.  Also, a cup of espresso would be the cherry on top! Enjoy!

Caramelized Onion, Bacon and Gouda Omelette

Instructions
  1. In a nonstick pan, heat the butter and caramelize the onions until soft and translucent.
  2. Keep it on the heat until it becomes brown and caramelized. Remove the onions.
  3. Add the bacon and fry until crispy. Remove from pan.
  4. If you need extra butter/oil in the pan you can add more (if you are Banting) otherwise you can use the fat from the fried bacon to do fry your omelette with.
  5. Add the eggs to a bowl, whisk and add it to the hot pan. Season with salt and pepper and allow too cook through, flip it over and keep it on the heat for another few minutes.
  6. Transfer to a plate and add your fillings. Serve with micro greens. Serves one.
