Chicken, Mushroom and Rosemary Quiche

Adding chicken to a quiche makes it a very filling dish.  With great flavor from the rosemary this quiche recipe is ideal to serve to your family for dinner. Any mushrooms can be used; I find that brown mushrooms are just so flavorsome.  Dinner on the table in no time!

Use the easy and simple quiche pastry recipe and preheat your oven to 180 degrees.

Instructions
Easy quiche pastry
  1. Combine all the dry ingredients in a mixing bowl.
  2. Next add all the wet ingredients and work with your fingers until easy manageable dough is formed.
  3. Line your tart or quiche tin with dough by pushing it firmly down with your fingers. No need to blind bake.
Chicken, mushroom and rosemary filling
  1. In a saucepan heat the oil and brown the chicken. Season with salt and black pepper.
  2. Remove the chicken from the pan, add the garlic and chili, and sauté in the leftover oil.
  3. Add the mushrooms and cook until dry and add chopped rosemary
  4. Take of the heat and add the spring onions to the chicken. Mix.
  5. In a mixing bowl beat the eggs and milk and add the cheese.
  6. Add all the cooked ingredients to the milk and cheese and mix.
  7. Pour into raw pastry crust and bake for 30 – 40 minutes until set.
