Adding chicken to a quiche makes it a very filling dish. With great flavor from the rosemary this quiche recipe is ideal to serve to your family for dinner. Any mushrooms can be used; I find that brown mushrooms are just so flavorsome. Dinner on the table in no time!

Ingredients
Easy quiche pastry
- 2 cups flour
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1 large egg
- 125 gr butter softened
- 20 ml cold water

- 2 chicken breast fillets cut into small pieces
- 15 ml olive oil
- salt and black pepper to season
- 1 clove garlic finely chopped
- 1 birds eye chili finely chopped
- 2 cups brown mushrooms chopped
- few sprigs fresh rosemary chopped
- 1/2 cup spring onion finely chopped
- 3 large eggs whisked
- 3/4 cups milk
- 1 cup cheddar cheese grated

Instructions
Easy quiche pastry
- Combine all the dry ingredients in a mixing bowl.
- Next add all the wet ingredients and work with your fingers until easy manageable dough is formed.
- Line your tart or quiche tin with dough by pushing it firmly down with your fingers. No need to blind bake.
Chicken, mushroom and rosemary filling
- In a saucepan heat the oil and brown the chicken. Season with salt and black pepper.
- Remove the chicken from the pan, add the garlic and chili, and sauté in the leftover oil.
- Add the mushrooms and cook until dry and add chopped rosemary
- Take of the heat and add the spring onions to the chicken. Mix.
- In a mixing bowl beat the eggs and milk and add the cheese.
- Add all the cooked ingredients to the milk and cheese and mix.
- Pour into raw pastry crust and bake for 30 – 40 minutes until set.
