Parmesan Chicken with Thyme

It has been a really busy week.  And I am not even talking about the normal rush of getting the kids to school and being on time for that dreaded meeting – I am talking about instances that happen that’s seriously ticking your normal friend “routine” right off.

Things like hospital visits, school concerts in the week, year-end functions, deadlines that take up all your time and energy, a washing machine packing up – things we dread and never wish for.  To make the frustration even worse is the fact that you still have to actually cook in between, sit for homework, bath the kids and so forth.

But enough of the negative stuff – it’s time to get back on track and give your all before you can finally give into the holiday spirit! This recipe of Parmesan Chicken with Thyme is just the thing to end your Monday off with a smile.  It is an easy and simple recipe of tender chicken cubes, smothered in a white wine and parmesan sauce on a flavorsome bed of basmati rice – sprinkled with fresh thyme. It is a sweet yet subtle dish that tantalizes the taste buds and I can guarantee that you won’t be disappointed by this baby!

It has to be the perfect Monday Madness Meal. (In other words, the dreaded Monday night dinner.)

Parmesan Chicken with Thyme
It is an easy and simple recipe of tender chicken cubes, smothered in a white wine and parmesan sauce on a flavorsome bed of basmati rice – sprinkled with fresh thyme.

Instructions
  1. First off brown the chicken pieces in the butter, season with salt and pepper and set aside.
  2. Heat the oil and sauté the garlic, thyme and onion. Deglaze the pan by adding the wine, cook for 10 - 15 min until slightly reduced and add the honey.
  3. Cook for another 10 minutes on high heat, remove (by now your sauce should be reduced quite a bit, if you feel it isn’t cook a little longer until desired reduction is reached) add parmesan cheese and pour over the chicken.
  4. Serve on basmati rice, with fresh thyme and parmesan.
