Spinach and Feta Savory Muffin

What a great way to spice up a muffin by adding savory ingredients to create a great snack for lunchboxes, picnic baskets or just for snacking in between meals.

The grand thing about savory muffins is that you can add any ingredient you like, from vegetables to meats, sausages and of coarse cheeses. When baking or trying out savory muffins, don’t be stingy with herbs.

Ingredients like garlic, chili, thyme, rosemary, coriander and parsley comes into play, and attributes in a huge way to create the tastiest savory muffin. If you want to make a bunch, keep them in the freezer to defrost as needed.

It is also a great way of getting rid of all your veggies and leftovers in your refrigerator.  Use the basic recipe and chuck in anything you desire.  Preheat oven at 180 degrees Celsius.

Instructions
  1. In a saucepan, heat the oil and sauté the onion and garlic until translucent. Add the thyme and stir. Remove from the heat.
  2. In a large mixing bowl add the flour, cheese, baking powder and salt. Mix.
  3. In a smaller mixing bowl, whisk the eggs with the milk and add this to the flour and cheese mixture. Mix quickly until just incorporated.
  4. Add cooked spinach and onions by folding it into the batter.
  5. Sprinkle crumbed feta cheese, and season with cayenne pepper.
  6. Bake at 180 degrees Celsius for 40 minutes until golden brown.
