Choc Chip Peanut Butter Cookies

It was that time of year again when dads get the chance to be spoilt for a full day! It is a day celebrated not by the dads but by many a young wife & kids, to show daddies just how much they are loved and cherished – Fathersday.

It has also come to my attention that on this day, an appropriate thing would be to give the father of my child a little something to show our gratitude.

Preferably gift wrapped.

Unfortunately sometimes it is a little difficult for me to buy anything for my gorgeous hubby (since he has all he needs) and has great knowledge of the balance on our credit card…  This can put us wives in a rather peculiar situation. Can’t it?

The thing with us ladies are, and correct me if I am wrong, that we would just die from guilt if we didn’t at least give him SOMETHING on his special day.  By the way, he did gladly give you that fancy bottle of perfume for Mothersday – didn’t he?

The only other alternative was to surprise him with these wonderful Choc Chip Peanut Butter Cookies and a glass of creamy milk in bed on Fathersday.  To make this even more special, our two year old drew up a cute Fathersday card and I just had to add that to the special moment.

These Choc Chip Peanut Butter Cookies are just divine.  The awesome thing about them is that they are totally FLOUR FREE! That is right girls, absolutely FLOUR FREE! Just to let you know, it wasn’t intended to be flourless.  As a matter of fact, I had no other choice than to go that route since I magically ran out of flour… But that is another story.

Surprisingly, they are super good! The recipe is as easy as falling out of a tree, and really so quick.

Preheat your oven to 200 degrees Celsius.

Instructions
  1. Combine all the ingredients in a mixing bowl and mix.
  2. Wet your hands and roll small balls of dough.
  3. Place them on a baking tray, about 5 cm apart, lined with wax paper and press down with a fork.
  4. Let them bake for 8 - 10 minutes at 180 degrees Celsius.
