When I think of Cottage Pie, I imagine myself in an old English thatch roof cottage somewhere in the country, with mist hanging over the horizon covering the green slopes with a blanket of grey. I can also imagine a cozy fire crackling in the hearth, heating up the room while I cuddle myself in layers of woolen and knitwear. The perfect country life meal would be a Cottage Pie.

This Cottage Pie recipe is excellent to use for big families by cooking in bulk and freezing the portions. It is also so versatile that any ingredients can be added or substituted like lentils, other vegetables and the potatoes can even be substituted for sweet potato mash. Your options are endless, and this Cottage Pie definitely gets five stars for an easy and comforting family meal. If only I could enjoy it while warming in front of that fireplace…

- 15 ml olive oil
- 2 cloves garlic peeled and minced
- 1 birds eye chili chopped fine
- 1 onion peeled and finely chopped
- 500 gr lean beef mince
- 3/4 cup water
- salt and black pepper to season
- spice for mince to season
- 1/2 cup fruit chutney
- 1/2 cup tomato puree
- 1/2 packet instant brown onion soup
- 1 cup corn whole kernels
- 1 cup peas
- 2 carrots peeled and sliced
- 4 potatoes peeled and chopped into small cubes
- water to cook potatoes
- salt and black pepper to season potatoes
- 2 tablespoons butter
- 1/2 cup milk
- 2 cups cheddar cheese grated
- Heat the olive oil in a large saucepan and sauté the garlic, chili and onion until translucent.
- Add the mince and brown.
- Add half of the water and cover to cook on medium heat for 10 minutes until the meat is cooked through.
- Next add the spice, salt and pepper, chutney, tomato puree and brown onion soup powder – mix it all through, turn the heat to low and simmer for 10 minutes mixing every now and then.
- Add the corn, peas and carrots to the meat, add the rest of the water, cover and simmer until the carrots feel soft.
- Meanwhile, add the potatoes to the pot of boiling water and cook until soft. Drain and mash the potatoes by adding seasoning, butter and milk. If you feel your mash is too lumpy and dry, you can add more butter and milk.
- When the mince and veggies are done, add the meat to an ovenproof dish and cover with spoonsful of mashed potatoes, topped with grated cheese.
- Set your oven on grill and grill the cottage pie until the cheese is melted or bubbly.
