Instructions
  1. Place the butter and sugar in a mixing bowl and combine well, using an electric hand mixer. Whisk until creamy.
  2. Add the vanilla essence and mashed pumpkin. Gently combine with the butter and sugar mixture.
  3. In a separate mixing bowl, combine the flour, salt, baking powder, baking soda, and spices.
  4. Add the dry ingredients to the wet ingredients and fold in until incorporated. Lastly fold in the chocolate chips.
  5. Cover the cookie dough with cling wrap and let it rest in the fridge for 30 minutes or overnight.
  6. When you are ready to bake, preheat the oven to 170 degrees celcius, and prepare your baking tray with baking paper or a silicone mat.
  7. Roll small balls with the cookie dough and lightly press down on each. Bake for 10 - 15 minutes. Keep in an airtight container for one week.
