Not only is tomatoes widely available, they are also great for your health. High in anti oxidants, Vit A and Vit C, tomatoes fights all the baddies in your body, by neutralizing harmful free radicals. Keeping it real uncomplicated here, I decided to dice up lovely fresh heirloom tomatoes with fresh basil and mint, tossed in olive oil and served with feta cheese.
A few humble ingredients can be transformed into a pretty salad, and this has me reflecting on some of our humble moments during the past year. Hopefully they get to become special memories…
