Pork Sausage Penne Bolognese

Yes, I am finally back at it and trying to create some delicious and easy recipes to share this year!  I hope everyone had a wonderful time spent with their friends and family over the festive season, as this post kicks off my first for 2017.   Us, for one, had a really busy time.  It is almost not fair that we have basically worked so hard during the year, only to be rushed, rather exhausted and totally broke after our fleeting break.  I’m sure you must feel the same way.

So rather than jumping in head first with “detox recipes” or “going vegan easy” or “burn those calories with this skinny salad” posts, I’m just trying to get my life in order with this back to school business and having to get back in the kitchen and cook dinner EVERY night, so here you have Pork Sausage Penne Bolognese.

Should my first recipe post of 2017 seriously be a bowl of carbs?  YES! Yes it should.

Penne and Pork Sausage Bolognese

I loved this Pork Sausage Penne Bolognese, as a matter of fact, I am adding this to our weekly dinner repertoire because:

  1. It’s a bowl of carbs.
  2. It is super quick to put together.
  3. I can bulk up for the non veggie eater’s lunchbox. That’s the husband in case you were wondering.
  4. It is bloody delicious, rather filling and comforting. Yes.

You can simply use any types of sausages for this recipe – a spicy sausage is best, as this basically ensures an immediate kick of flavor without having to worry too much about adding spices and such.

Penne and Pork Sausage Bolognese

I made a simple bolognese sauce with garlic, finely chopped onion and a tin of tomatoes and sneakily added some carrots and chopped spring onions in there too.  Don’t forget the grated parmesan on the table when you are dishing up. Enjoy!
