Chicken and Potato Salad

Is it only me, or is the warmer weather approaching us here in the South? I sure am not complaining about all the sunshine we are getting in Joburg, and my cravings for fresh and healthy salads has officially begun.

Not only does salad give that extra confidence in the feeling-skinny zone, it is also a pretty easy and super fast meal to zip together for fuss free dinners or lunches.

Great to serve as a side, salads are about as good (and easy) as it gets. This salad of Chicken and Potato is a real gem, you can literally feed the family in a few easy steps.

The salad consists of tender grilled chicken breasts and soft boiled potatoes smothered in a wholegrain mustard mayonnaise, served on a bed of rocket and garnished with fresh chives. Add your own variety of ingredients like cherry tomatoes or radishes, or serve it hot without the rocket with slivers of delicious Parmesan cheese.

Chicken and Potato Salad
A filling salad of grilled chicken breast and potatoes on rocket with a mustard and mayo dressing.

Instructions
  1. First off, heat the olive oil in a non stick pan and grill the chicken breasts until done, and brown. Season. Put them aside.
  2. Boil the chunks of potatoes until just soft. Drain and set aside.
  3. Mix the mayonnaise, mustard, lemon juice and salt & pepper in a mixing bowl.
  4. To serve, arrange fresh rocket at the bottom of a salad plate.
  5. Cut the chicken in pieces, and add it to the mayonnaise mixture, with the cooked potatoes. Carefully mix it through.
  6. Add the chicken and potato on the rocket, sprinkle with fresh chives and serve with lemon wedges.
