So, I had to adapt.  From now on, until our oven is fixed,  I need to cook dinner for the hubby (who doesn’t eat ANY veggies) and the fussy boy, by only using the stove top.  Not a mission at all when you can enjoy a delicious Creamy Chicken and Rice Bowl, right?

Here is what I did.

I hammered the poor chicken breasts flat and cooked them in butter until done.

Then as you remove the chicken breasts from the pan, add the cream and allow to reduce in the hot pan – soaking up all the chicken frying goodness left over.

I had to cook rice since roasted potatoes are simply not going to happen. WHY!!? I added chopped tomato and onion salsa to the rice for extra flavour and texture.

It’s a delicious and quick meal to have ready for dinner after a hectic day – it tastes amazing and should be pretty filling to the crowds.

Just to give you all a heads up. This creamy sauce is amazing.  Since I’ve made this dish, I’ve tried it on cooked baby potatoes and even added it to my chicken salad I had for lunch the next day.  You simply have to try it.  What is your favorite chicken recipe?  Please share below and have a good week!

Instructions
  1. First off, season the chicken breast fillets and fry until golden and cooked in butter.
  2. Remove the meat from the pan and while on high heat - add the cream to the pan.
  3. Remove from heat and allow to reduce.
  4. Add the mayonnaise and hot sauce, mix and allow to simmer for a few minutes more on medium heat. Set aside.
  5. In a mixing bowl combine the chopped tomato and onion. Mix it through the cooked rice.
  6. Serve the cooked chicken breasts with creamy sauce and salsa rice.
