It’s finally weekend again and I am so ready to kick my feet up and reee-lax!
If your weekend has little to no action planned – which is totally a thing because I like to do absolutely zero on weekends – you might want to dust off your aprons and give your cobweb covered muffin tins a good clean.

I first had to consult trusty google to find out if I might be stepping into the wrong direction here, by calling these delicious sweet morsels ‘whoopie pies’. The oracle put my mind to rest as indeed, you CAN make whoopie pies from just about any cookie, biscuit, pie or cake. Originally from the US, (ps, thank you guys) whoopie pies are normally filled with a sweet creamy filling or frosting.

So, my whoopie pies are the EASIEST little treat to get your skilled, baking hands on this weekend. I used a basic vanilla cupcake recipe for my ‘pies’ with loads of fresh lime and filled it with creamy mascarpone cheese – which is actually really rich and not too sweet in this version.

Instructions
  1. In a mixing bowl sift the dry ingredients and mix. Set aside.
  2. In an electric mixer, combine the butter and sugar and whisk until pale.
  3. Add the eggs one at a time to incorporate.
  4. Add the vanilla essence and lime - whisk until just incorporated.
  5. Now combine the dry and wet ingredients by adding a little of the dry ingredients to the wet ingredients and alternating between adding the milk as well.
  6. Mix until incorporated and set aside. Fill the prepared muffin tins 3/4 full with batter and bake for 15 - 20 min at 180 degree Celsius.
  7. Leave to cool, then combine the mascarpone cheese with lime juice and mix well.
  8. Assemble the whoopie pies by cutting each cupcake in half, and filling it with mascarpone, topping it with the top part.
  9. Dust with icing sugar and more lime zest. Ready to serve.
