It’s finally weekend again and I am so ready to kick my feet up and reee-lax!
If your weekend has little to no action planned – which is totally a thing because I like to do absolutely zero on weekends – you might want to dust off your aprons and give your cobweb covered muffin tins a good clean.
You will be baking Vanilla, Lime and Mascarpone Whoopie Pies this weekend! Whoop whoop! (get it?)
I first had to consult trusty google to find out if I might be stepping into the wrong direction here, by calling these delicious sweet morsels ‘whoopie pies’. The oracle put my mind to rest as indeed, you CAN make whoopie pies from just about any cookie, biscuit, pie or cake. Originally from the US, (ps, thank you guys) whoopie pies are normally filled with a sweet creamy filling or frosting.
So, my whoopie pies are the EASIEST little treat to get your skilled, baking hands on this weekend. I used a basic vanilla cupcake recipe for my ‘pies’ with loads of fresh lime and filled it with creamy mascarpone cheese – which is actually really rich and not too sweet in this version.
My pro tip: There can never be enough lime.
