Delicate Peanut Butter Cookies
If you are a peanut butter lover and you have been scouring the web for cookies to bake this holiday – look no further, these cookies are definitely the ones to try this festive season. It is a simple recipe that the kids would also enjoy putting together – and has easy methods to bake the perfect peanut butter cookie.
When I say these cookies are delicate – believe me when I say – they will literally crumble in your mouth. The most decadent cookie with loads of peanut butter, soft flaky and crumbly freshness… it almost feels like you just gulped a whole tablespoon of peanut butter and indulging in a creamy and sticky treat.

I used crunchy peanut butter for my recipe, and was a little disappointed when I saw that the actual peanuts just disintegrated during the baking process. I would suggest that you add a half a cup or so chopped peanuts and add that to your batter. Jummm…
Preheat your oven to 180 degrees Celsius and grease a few baking sheets.

Instructions
Sift the flour and baking powder in a large mixing bowl, add the egg, peanut butter, peanuts and salt and mix together.
In an electric mixer or with a hand mixer beat the butter, vanilla essence and sugars until creamy and add this to the flour mixture, and mix until incorporated.
NOW – again – like so many times before – I am thinking that it is impossible to do anything with this messy dough as it was very sticky and wet. I was tempted to add more flour, but after a rest in the fridge it rolled into beautiful delicate little balls of dough.
After resting in the fridge for an hour or so, roll into desired balls and arrange on a greased baking sheet, press down lightly with a fork or fingers.
Bake for 15 minutes at 180 degrees Celsius, checking that it doesn’t go too dark closer to the end.
